Creamy and meaty with no cream or meat! Ingredients:
1 3/5 cup black eyed peas 104222 |
2.16 cup kidney beans |
5 1/2 oz tomato paste |
3 1/5 cup tinned tomato, chopped |
1 cup water |
1 tbsp olive oil |
1 1/2 cup mushroom, chopped |
1 1/2 cup onion, chopped |
1 large green pepper |
4 stalks celery |
4 clove garlic |
1 cup bulgur |
1/2 cup chocolate chips |
3 tbsp chili powder |
1 tsp paprika |
1 tbsp cumin |
1 tsp cinnamon |
2 tsp salt |
Directions:
1. Chop veggies, onion and garlic and saute them in olive oil until onions are golden. 2. Mix in spices and add enough water to keep it moist. Cook 5 minutes. 3. Stir in tomatoes, tomato paste and water. 4. Stir in bulgur. 5. Boil 5 minutes. 6. Stir in beans. 7. Simmer 20 minutes. 8. Add water, salt and spices to adjust for taste and consistency. 9. Stir in chocolate chips until melted. |
