For Liz, our visiting vegan. Ingredients:
12 oz diced tomatoes |
12 oz diced tomatoes with green chilis |
1 large onion, chopped |
2 green bell peppers, chopped |
1 t canola oil |
12 oz chili beans |
12 oz black beans |
1 cup corn |
2 c tomato soup |
1 salt, pepper, chili powder, cumin, garlic powder, other spices to taste |
Directions:
1. In large skillet cook onion and green pepper in oil until beginning to soften. 2. Add tomatoes, beans, corn, soup and spices. 3. Simmer until reduced and thickened. |
