Cold chickpea based mediterranean salad. Healthy and vegan. Ingredients:
1 medium tomato, cubed |
14 ounces artichoke hearts, quartered |
30 ounces canned chick-peas |
1/2 red onion, minced |
2 garlic cloves, minced |
1/4 cup olive oil |
1/4 cup balsamic vinegar |
salt (to taste) |
pepper (to taste) |
Directions:
1. Rinse the canned chickpeas. Mix all ingredients in a large bowl. Serve Cold. |
