Fabulous vegan brownies adapted slightly from The Vegan Family Cookbook by Brian P. McCarthy. Ingredients:
1 cup white flour |
3/4 cup cocoa powder, sifted |
1 1/4 cups sugar |
1/8 teaspoon baking powder |
1/2 teaspoon salt |
3/4 cup chocolate chips (optional) |
1/4 cup walnuts, chopped (optional) |
1/3 cup soymilk |
1/3 cup canola oil |
1/4 cup silken tofu |
1 tablespoon vanilla |
Directions:
1. In a large bowl, whisk together flour, cocoa powder, sugar, baking powder, salt, plus walnuts and chocolate chips if using. 2. In a blender, blend the soy milk, oil, tofu and vanilla. 3. Add blended liquid to dry ingredients and stir until combined. The batter will be very thick. 4. Spread evenly in a greased 8 inch square pan. 5. Bake 35 minutes, or until edges are dry and centre is still moist-looking. |
