Ingredients:
2 c unsweetened almond milk
2 c water
1 c yellow cornmeal
2 t maple syrup
Directions:
1. In a 2-quart casserole, combine the 2 cups soymilk, water, and cornmeal.
2. Cover with a lid. Microwave on high 4 minutes. Whisk and microwave on high, covered, for 4-5 minutes, or until the cornmeal is cooked. Whisk in the maple syrup.
3. Serve with soymilk and fruit.
