Delicious, healthy, vegan breakfast cookies! Ingredients:
1/4 cup brown sugar |
1/4 cup agave nectar |
1/4 cup soymilk |
1/4 cup non-hydrogenated vegan margarine |
6 ounces silken tofu |
1 tablespoon vanilla |
1 banana |
2 cups whole wheat pastry flour |
1 teaspoon baking powder |
1/4 teaspoon salt |
1 teaspoon cinnamon |
1 cup oatmeal |
1 large apple |
1 cup carrot, shredded |
1 cup pecans, chopped |
Directions:
1. Cream first 7 ingredients. (May be chunky from banana). 2. Sift together dry ingredients and slowly add into the creamed mixture. 3. Fold in Apple, carrot, and nuts. 4. Bake for 14 minutes at 350. |
