Vegan Black Beans and Rice |

Adapted from a recipe I found on Simply Recipes. This is a quick and easy vegan meal. Ingredients:
1 cup white rice, uncooked |
1 tablespoon oil |
1 small onion, chopped |
1 red bell pepper, chopped |
3 stalks celery, chopped |
1 garlic clove, minced |
2 tablespoons vinegar |
tabasco sauce, to taste |
salt, to taste |
2 (15 ounce) cans black beans, rinsed and drained |
Directions:
1. Cook rice according to directions. Set aside. 2. In a wok or large fry pan, heat the oil over medium high heat. Add in the onion, pepper and celery - stir frying until tender, about 5 minutes. 3. Add the garlic and stir fry an additional minute. 4. Pour the vinegar, Tabasco, and salt over all. Gently stir in the beans and the cooked rice. Cook until completely heated through. |
