Vegan Better for you Banana Bread |

Ingredients:
2.25 teaspoon(s) baking powder |
1 dash(es) kosher flake salt (supstitute table salt if needed) |
3 medium very ripe bananas |
2 portions ener g egg substitute |
1 cup(s) sugar |
1/3 cup(s) vanilla or plain soy yogurt |
1/4 cup(s) vegetable oil |
1 cup(s) white all purpose flour |
1 cup(s) whole wheat flour |
Directions:
1. Preheat oven to 350 2. Combine flours, baking powder, and salt and stir with a whisk 3. Place sugar and oil in a large bowl, and beat with a mixer at medium speed until well blended. Add the ener G egg substitute half at a time, beating well after each addition. Add banana, yogurt, vanilla; beat until blended. Add flour mixutre; beat at low speed just until moist (I used a wooden spoon for this). Spoon batter into a 8.5 by 4.5-inch loaf pan coated with cooking spray. Bake at 350 for about 1 hour or until wooden pick inserted in center comes out clean. Cool 10 minutes in pan on a wire rack. Remove from pan. Cool completely on wire wrack. |
