From The Volumetrics Eating Plan Ingredients:
1/2 cup chopped onion |
1/4 cup chopped celery |
1 tablespoon chopped parsley |
1/2 teaspoon chopped garlic |
3 1/2 cups vegetable broth |
1 1/2 cups canned diced tomatoes, with liquid |
1/4 cup pearl barley |
1/4 teaspoon salt |
ground black pepper |
1/4 teaspoon dried oregano |
1/4 teaspoon dried thyme |
1 bay leaf |
2 cups chopped mushrooms |
Directions:
1. Spray a large pot with cooking spray and place over medium-high heat until hot. Add the onion, celery, parsley, and garlic and cook, atirrring frequently, 4 minutes. 2. Add the broth through the bay leaf and bring to a simmer. Cover and simmer, stirring occasionally, for 20 minutes. 3. Add the mushrooms and simmer another 20 minutes. 4. Remove and discard bay leaf before serving. |
