Vegan Banana Pancakes

Easy to make and a great way to use up those brown bananas
Ingredients:
2 slightly soft bananas
1 1/2 cups all-purpose flour
1 teaspoon baking powder
1 3/4 cups soymilk
1/2 cup brown sugar
1/2 teaspoon salt
1 teaspoon vanilla
2 tablespoons oil
Directions:
1. combine all ingredients in a blender and blend till smooth.
2. Pour onto oiled skillet at medium heat.
3. Bubbles will form and pop.
4. brown both sides and serve.
5. You may have to thin batter with water to get it to spread easily.
