Vegan Banana Oatmeal Blueberry Loaf |

Top with brown sugar! Ingredients:
1 1/2 cups all purpose flour |
2/3 cup sugar |
2 1/4 teaspoons baking powder |
1/2 teaspoon salt |
1/2 teaspoon cinnamon |
1/2 cup quick-cooking oats |
1 medium banana, mashed |
6 tbsp apple sauce |
1/2 cup canola oil |
2 teaspoons vanilla |
1 cup blueberries, tossed with |
1 tbsp all-purpose flour |
Directions:
1. Preheat oven to 350 degrees F. 2. Set oven rack to second-lowest position. 3. Grease and flour an 8 x 5-inch loaf pan. 4. In a bowl combine the flour with next 5 ingredients. 5. In a small bowl whisk the eggs with oil and vanilla until well combined then mix in the mashed bananas; add to the dry ingredients mixing with a wooden spoon until just combined. 6. Toss the blueberries with the 1 tbsp flour. 7. Gently mix in the blueberries. 8. Transfer to loaf pan. 9. Bake for about 1 hour and 10 minutes or until the loaf tests done. 10. Cool 10 minutes in the pan then remove to a wire rack to cool completely. |
