A delicious vegan muffin. Wholesome, yet sweet treat. Ingredients:
mix dry ingredients |
1 c whole wheat flour |
1/2 c unbleached white flour |
1/2 c oat bran |
1-1/2 tsp baking powder |
1/2 tsp baking soda |
1/2 tsp salt |
1/2 c mini choc. chips or carob chips (vegan if you like) |
blend until smooth the wet stuff |
2 mashed ripe (yeap soooo ripe) bananas |
1/4 c oil |
3/4 c apple juice concentrate (yeap the frozen kind) |
1 tsp vanilla |
1/3 c soy, rice or nut milk of your choice |
2 tbs soy yogurt |
Directions:
1. Using two bowls following the ingredient directions. Then ya' just mix them breifly together. Don't worry about lumps. 2. Spray or line muffin tin. Using an ice cream scoop fill tin cups 3/4 full. 3. Bake at 375* for 35-40 minutes. |
