Finally, I found a banana bread recipe I'm really happy with!
Ingredients:
2 cups all-purpose flour
1/2 cup or less brown sugar (i used coconut sugar)
1 t. baking powder
1/2 t. salt
3/4 t. cinnamon
1/2 cup plain soy milk or almond milk or water
2 cups mashed ripe banana, (about 4 large)
1/4 cup vegetable oil
2 t. maple syrup
1 t. vanilla extract
Directions:
1. 1. Preheat oven to 350F and grease 9 x13 loaf pan
2. 2. Sift together dry incredients
3. 3. Mash bananas
4. 4. Add oil, maple syrup, vanilla to mashed banana
5. 5. Stir in the water
6. 6. Mix in the dry ingredients (do not overmix!)
7. 7. Pour into pan and level
8. 8. Bake about an hour, until a toothpick comes out a little moist.
