Ingredients:
1 1/2 cup short grain white or brown rice
1/4 cup rice vinegar
dash sugar
1 1/2 tsp salt
4 to 6 cups lettuce
1/4 cup shredded carrot
1 cucumber cut into thin strips
2 scallions finely chopped
1 avocado, peeled and chopped
2 sheets nori, cut into 1/2 x 1/2 inch squares
1 tbs seseme seeds
dressing
2 tsp wasabi powder
dashes of hot water
2 tbs soy or tamari sauce
2 tbs olive oil
splash of rice wine vinegar
Directions:
1. Cook rice per pkg directions
2. While rice is still hot, add 1/4 cup of the vinegar, sugar and salt to taste and chill to cool
3. Make dressing: in small bowl combine wasabi with hot water to make a paste
4. Add in soy sauce and stir to dissolve
5. Add a bit of olive oil and splace of rice wine vinegar
6. Asemble: layer in individual bowls: lettuce, rice, carrots, cucumbers, scallions, avocado, nori and seseme seeds
7. Spoon dressing over the top
8. Note: for seafood lovers one may top with fresh cooked crab or shushi grqade tuna etc
