Readers favorite salad recipes, newspaper, the next best thing to rolled sushi! Ingredients:
1 1/2 cup short grain white or brown rice |
1/4 cup rice vinegar |
dash sugar |
1 1/2 tsp salt |
4 to 6 cups lettuce |
1/4 cup shredded carrot |
1 cucumber cut into thin strips |
2 scallions finely chopped |
1 avocado, peeled and chopped |
2 sheets nori, cut into 1/2 x 1/2 inch squares |
1 tbs seseme seeds |
dressing |
2 tsp wasabi powder |
dashes of hot water |
2 tbs soy or tamari sauce |
2 tbs olive oil |
splash of rice wine vinegar |
Directions:
1. Cook rice per pkg directions 2. While rice is still hot, add 1/4 cup of the vinegar, sugar and salt to taste and chill to cool 3. Make dressing: in small bowl combine wasabi with hot water to make a paste 4. Add in soy sauce and stir to dissolve 5. Add a bit of olive oil and splace of rice wine vinegar 6. Asemble: layer in individual bowls: lettuce, rice, carrots, cucumbers, scallions, avocado, nori and seseme seeds 7. Spoon dressing over the top 8. Note: for seafood lovers one may top with fresh cooked crab or shushi grqade tuna etc |
