Surprisingly tasty way to do eggplant. Got thumbs up from teen boys. Ingredients:
400 g eggplant, diced |
411 g tomatoes, chopped |
75 g olives, green |
130 g celery |
1 t olive oil |
150 g onion |
1 large bell pepper |
15 g garlic |
100 g raisins |
1 t capers |
1/4 c balsamic vinegar |
1/4 t cinnamon |
Directions:
1. Chop eggplant and sprinkle with a little salt 2. Saute garlic, onions and green pepper 3. Puree tomatoes 4. Add eggplant to pan 5. Add raisins, olives, capers 6. Saute for a while 7. Add vinegar and cinnamon |
