Surprisingly tasty way to do eggplant. Got thumbs up from teen boys.
Ingredients:
400 g eggplant, diced
411 g tomatoes, chopped
75 g olives, green
130 g celery
1 t olive oil
150 g onion
1 large bell pepper
15 g garlic
100 g raisins
1 t capers
1/4 c balsamic vinegar
1/4 t cinnamon
Directions:
1. Chop eggplant and sprinkle with a little salt
2. Saute garlic, onions and green pepper
3. Puree tomatoes
4. Add eggplant to pan
5. Add raisins, olives, capers
6. Saute for a while
7. Add vinegar and cinnamon
