Every Osso Bucco recipe has a different flair to it! I like to keep it simple with the taste of the vegetables coming through. Leek is very good in this recipe! I don't add salt or pepper as I use a gourmet stock that has enough flavour for this dish. Ingredients:
4 veal shanks |
1/2 cup plain flour |
3 carrots, sliced |
3 celery ribs, sliced |
1/2 leek, sliced |
3 mushrooms, sliced |
6 tomatoes, diced |
2 garlic cloves, crushed |
1 cup red wine |
2 -3 cups homemade vegetable stock |
parsley, chopped |
Directions:
1. toss the shanks in the flour and brown them in a pan on both sides (use a little olive oil). 2. combine all the other ingredients into a large casserole dish. 3. push the shanks into the combined mixture, ensuring it is covered with liquid. 4. salt and pepper to taste. 5. bake in a medium oven (150 C) for 3 hours. 6. serve with potato or risotto and some green beans. 7. you can add your favourite herb - I love rosemary with this dish. |
