Read more ...There are many ingredients that you can add to this recipe but I prefer the original recipe. Its origen is Smyrni ( today being named Izmir ) , a sea-side city on the eastern shore of the Aegean Sea ( Turkey today ) . When those thousands of Greeks were violently forced to leave ( murder , rape ) , they brought many recipes with them . This is one of them !! It can be an appetizer , a second course or a main dish . They normally had it as an appetizer
Ingredients:
8 medium equal-sized green bell-peppers , rinsed
4 onions peeled , rinsed
1 handful fresh parsley leaves , rinsed
4 ripish tomatoes , rinsed
8 garlic cloves , peeled and rinsed
extra virgin olive oil
salt pepper oregano
16 cubes 1.5 x 1.5 cm original greek feta cheese

Directions:
1. Cut the peppers longitudinally in half , remove outer stem and inner seeds
2. Place pepper halves in a relatively deep oven pan . Sprinkle a little sugar , salt and pepper in every half
3. Blend onions , parsley , tomatoes and garlic together . Add salt , pepper and a some pinches of sugar . This is your filling .
4. Fill each pepper half 3/4 ful and insert a cube of Feta .
5. Add 2 tbsps olive oil in every half .
6. Pour 3 cups olive oil on top of halves , evenly across the pan.
7. Sprinkle with oregano .
8. Pre heat your oven to 220 degr. Celcius , place your oven pan on second lower scale , turn down temp to 190 degr. immediately and roast for 50 min , grilling the last 5 min .
9. There should only be oil left at the bottom of your pan at the end.
10. Like Yemista , this dish needs fresh bread for dipping in the oil and some extra Feta on the side !! Eaten cool or slightly chilled but NEVER hot !!
