VARIETY SPICE MUFFINS This recipe came from an estate sale. I obtained it when I purchased the family collection from the Skillman Estate in McKinney Texas in 1991. Ingredients:
2-1/2 cups buttermilk baking mix |
1/2 cup granulated sugar |
1 teaspoon cinnamon |
1/2 teaspoon cloves |
1/2 teaspoon nutmeg |
1/2 cup applesauce |
1 small can undiluted evaporated milk |
2 tablespoons vegetable oil |
1 egg beaten |
2 tablespoons butter |
1/4 cup sugar |
1/4 teaspoon cinnamon |
Directions:
1. Combine baking mix, sugar, cinnamon, cloves and nutmeg in medium bowl and mix well. 2. Beat together applesauce, evaporated milk, oil and egg. 3. Add liquid mixture to dry mixture then stir just until dry ingredients are moistened. 4. Fill 12 buttered muffin cups 2/3 full of batter then bake at 400 for 20 minutes. 5. Cool slightly then remove from pan. 6. Combine sugar and cinnamon. 7. Melt butter then dip tops of muffins in melted butter then roll in cinnamon sugar mixture. |
