I loved these cookies from a local bakery then moved and couldn't get them anymore so I decided to experiment to come up with the perfect resemblence and this comes close. Ingredients:
3 eggs |
1 1/4 cups packed brown sugar |
1 cup sugar |
1 1/2 cups creamy peanut butter |
1/2 cup butter (room temp) or 1/2 cup margarine (room temp) |
1/2 teaspoon salt |
1/2 teaspoon vanilla |
2 teaspoons baking soda |
4 1/2 cups quick oats |
1/2 cup m&m |
1/2 cup chocolate chips |
1/2 cup toasted coconut (optional) |
1/2 cup caramel, bits (optional) |
Directions:
1. Preheat oven to 350. 2. In a large bowl mix the eggs and sugars. Mix well. 3. Add peanut butter, buuter, salt, and vanilla and mix well. 4. Add the baking soda (if using a stand mixer, use mix (slow) setting), then add the oats. 5. Stir in the m&ms, choc. chips, coconut, and caramel. I use an ice cream scoop (depending on the size half full) and place them on a slipmat on a baking sheet about two inches apart. 6. Bake for 9 minutes. 7. Leave on the cookie sheet for a couple minutes before rermoving to a rack or they will fall apart. |
