Vannisa's Hominy Beef Bake |

I made this for little sister who just adores hominy. I can't remember where I got the original recipe, but I have modified it somewhat. It is a delicious dish and I am not to particularly fond of hominy. I hope you and your families will enjoy it too. Ingredients:
1 lb ground chuck |
1 small onion, chopped |
2 garlic cloves, minced |
15 1/2 ounces white hominy, drained |
15 ounces chili with beans |
8 ounces tomato sauce |
1/2 cup water |
3 teaspoons chili powder |
salt |
black pepper |
10 1/2 ounces frito's corn chips, crushed fine |
nonstick cooking spray |
Directions:
1. In a large skillet brown the meat. Add onion and garlic. Cook over medium heat until onions are translucent. Drain well. 2. Stir in the rest of the ingredients except for the corn chips. Transfer to a 13x9x2 inch baking dish that has been coated with non-stick cooking spray. 3. Bake in a 350 degree oven, uncovered, for 20 minutes. Sprinkle the cornchips over the top and return to the oven for an additional 10 minutes. 4. Let rest for 10 minutes before serving. |
