Vanishing Pineapple Upside-down Cake |

This cake has won our Boy Scout Camporee Golden Spoon Dutch Oven contest for the last two years - and there are never left-overs. It's really rich so serve small slices or have a glass of milk handy. Ingredients:
1/2 cup butter |
1 cup brown sugar |
1 (20 oz) can pineapple slices in juice |
red and green cherries |
1 1/4 cups juice from pineapple slices and water |
1 butter or lemon cake mix |
3 eggs |
Directions:
1. Cover dutch oven in foil being careful not to punch holes in the foil...... 2. Melt butter. 3. Sprinkle brown sugar evenly over bottom of dutch oven. 4. Place pineapple slices over brown sugar - even pattern out. 5. Place a red cherry in each pineapple ring. 6. Place a green cherry inbetween each ring. 7. Mix cake mix, eggs, and juice/water mix. 8. Pour mixture evenly over over pineapple slices. 9. Place 6 coals on bottom and 18 coals on lid. 10. Cook for 25 minutes then use bamboo skewer to check if done - there should be no cake clinging to skewer. 11. (check coals on bottom to see if they are still good - if not replace). 12. If not done cook for 5 more minutes. Use bamboo skewer to check if done. If not done, cook 5 more minutes. 13. When done remove from coals and wait 5 minutes. 14. Peel foil off of dutch oven and carefully lift cake out of dutch oven. 15. Place plate upside down on top of cake and flip right-side up. 16. Carefully peel foil off top - replace any cherries or pineapple rings that peel off. |
