Vanilla Yogurt-cinnamon Quick Bread |

This is a very simple but tasty quick bread. The thick Greek yogurt really helps keep it moist. Enjoy it on its own or with a spread like Orange Marmalade. Mmmm. I baked my loaf in an 8 1/2 x 4/12 pan. Ingredients:
1 3/4 c. unbleached flour |
1 1/2 tsp. baking powder |
1 tsp. baking soda |
1/4-1/2 tsp. cinnamon |
8 oz. greek vanilla yogurt |
2 eggs, beaten |
2 tbsp. milk |
1/4 c. packed dark brown sugar |
1/4 c. canola/vegetable oil |
Directions:
1. Preheat oven to 350 and prepare loaf pan by coating it well with cooking spray. (I spray the pan and then use my fingers to make sure all of the corners are well covered.) 2. Combine dry ingredients in a large bowl and set aside. 3. Mix yogurt, eggs, milk, sugar and oil. 4. Add to dry ingredients, stirring just until dry ingredients are moist. 5. Spoon batter into prepared loaf pan and bake for 35-40 minutes or until toothpick comes out clean. |
