Being out of vanilla wafers when you're trying to make banana puddin' is just plain ole bad luck. I found a recipe here for the cookies, but many of the reviewers said they stayed soft. So, in search of the recipe that would yield my crunchy little gems, I found this. It worked for me, so I hope it works for you. Ingredients:
1/2 cup powdered sugar |
1/3 cup sugar |
1/3 cup shortening |
1 egg |
1 teaspoon vanilla |
1/8 teaspoon salt |
1 1/2 cups cake flour |
1 1/2 teaspoons baking powder |
1 tablespoon water |
Directions:
1. Preheat oven to 325 degrees. 2. Cream together sugars, shortening, egg, vanilla, and salt in a large bowl. Sift in the flour and baking powder. 3. Add the 1 tablespoons water and mix until the dough forms a ball. 4. Roll the dough into 1/2 inch balls and flatten slightly onto a lightly greased cookie sheet. Bake for 15-18 minutes or until cookies are light brown. 5. Cool on a wire rack. |
