Vanilla Wafer Orange Lemon Rind Pecan Cake |

Tried and True. This old Vanilla Wafer cake recipe has the addition of fresh orange and lemon rind. Perfect combination for a most delicious dessert. Ingredients:
2 cups sugar |
2 sticks unsalted butter |
6 whole eggs |
1 (12 ounce) package or box of vanilla wafers, *crushed |
1/2 cup milk |
1 can angle flake coconut |
1 tablespoon pure vanilla extract |
1 tablespoon fresh orange rind |
1 tablespoon fresh lemon rind |
Directions:
1. With an electric mixer, cream sugar and butter 2. Add eggs, one at a time 3. Beat well 4. Add crushed vanilla wafers alternately with milk to the creamed mixture 5. Add coconut, vanilla extract, orange and lemon rind 6. Stirring well 7. Add chopped pecans 8. Place in a well greased Bundt cake pan and bake at 325 degrees for 1 hour and 15 minutes |
