Very close to the starbucks mini scones...I changed the recipe to fit the type of ingredients I conveniently had in my fridge (Like Ice Cream) and lemme say..THEY ACTUALLY came out pretty good...I've updated the recipe with new pics. Read more ...this time I made actual minis and I decreased the amount of ice cream to make the dough a bit stiffer lending a better texture to cut them into triangles Ingredients:
1 3/4 cups all purpose flour |
3 tbs sugar (supposed to be vanilla sugar but i upped the vanilla extract instead) |
2 1/2 tsp baking powder |
1/2 tsp salt |
1/3 cup butter ( i used vegetable oil spread) |
1 egg beaten |
2 tsp vanilla extract |
4 tbs breyers natural vanilla ice cream , melted but still cold |
1 cup confectioners sugar |
extra breyers natural vanilla ice cream (about a tablespoon or two) |
Directions:
1. Sift together flour sugar baking powder and salt in a bowl 2. cut in the butter until it resembles pea-sized crumbs 3. in a smaller bowl beat together the egg and vanilla until smooth 4. mix egg mixture with flour/butter mixture 5. stir in the melted ice cream 6. Mix together until dough forms 7. form a ball and pat down on lightly floured surface making a thick, even circle 8. cut the circle into 12 wedges then shape each wedge into a neat triangle 9. bake in preheated oven at 400 degrees for about 10-12 minutes or until top is light brown and inside is done( I baked in a toaster oven since these are so cute and tiny) 10. cool on a baking rack 11. stir together confecioners sugar and the extra Vanilla Ice Cream a little at a time until it becomes a thick glaze. YOU MAY USE MORE OR LESS AS NEEDED UNTIL DESIRED CONISTENCY 12. spoon glaze over cooled scones 13. repeat last step a few times until scones are glazed nice and thick |
