Vanilla Ice Cream with Dates in Wine Syrup |

Ingredients:
1 cup dry red wine |
1/4 cup apple cider |
8 chopped pitted medjool dates |
1 tablespoon fresh lemon juice |
2 cups vanilla light ice cream |
Directions:
1. Combine wine and cider in a small nonstick skillet over high heat; bring to a boil. Add dates; reduce heat to medium, and simmer 8 minutes or until slightly thickened. Transfer mixture to a bowl. 2. Spoon 1/2 cup ice cream into each of 4 bowls. Top each serving with about 1/4 cup date mixture. Serve immediately. |
