Recipe by vanilla expert Patricia Rain. Ingredients:
3/4 cup red wine vinegar |
1/4 cup sugar |
1 (6-inch) vanilla bean, split lengthwise |
1 1/2 cups fat-free chicken broth |
3/4 cup madeira |
1/4 cup water |
1 tablespoon cornstarch |
1/8 teaspoon salt |
Directions:
1. Combine vinegar and sugar in a saucepan. Bring to a boil; cook 7 minutes. Scrape seeds from bean; place seeds and bean in pan. Stir in broth and Madeira; return to a boil. Cook 15 minutes, stirring frequently. Combine water, cornstarch, and salt; stir well, and add to pan. Bring to a boil, and cook 1 minute, stirring constantly; discard bean. |
