This recipe goes with Japanese Fruit Cake
Ingredients:
3/4 cup sugar
1 egg white
1 1/2 teaspoons light corn syrup
dash of salt
2 1/2 tablespoons cold water
1/2 teaspoon vanilla extract
Directions:
1. Combine sugar, egg white, syrup, and salt in top of a double boiler; add cold water, and beat at low speed of an electric mixer 30 seconds.
2. Place over boiling water; beat constantly at high speed 7 minutes or until stiff peaks form. Remove from heat. Add vanilla; beat 2 additional minutes or until thick enough to spread.
