Omit rum extract, and add a shot of rum to each serving for a potent refresher. Ingredients:
1 1/2 quarts milk |
1 (3.4-ounce) package vanilla instant pudding mix |
2 tablespoons sugar |
1 tablespoon vanilla extract |
2 teaspoons rum extract |
2 pints vanilla ice cream |
1 cup whipping cream, whipped |
freshly grated nutmeg |
Directions:
1. Whisk together milk and vanilla pudding mix in a bowl until pudding mix dissolves (about 2 minutes). 2. Cover and chill mixture 15 minutes or until thickened. 3. Add sugar, vanilla, and rum extract, stirring until sugar dissolves. 4. Cover and chill at least 1 hour. Pour mixture into cups, and top each serving with a scoop of ice cream and a dollop of whipped cream; sprinkle with freshly grated nutmeg. |
