This cake is just the right dessert to top off a great meal. A light, airy cake with the essence of vanilla. (This recipe is from the cookbook How It All Vegan. ) Ingredients:
1 1/2 cups flour |
2 teaspoons baking powder |
1/2 teaspoon salt |
3/4 cup dry sweetener |
3/4 cup soymilk |
2 teaspoons vanilla extract |
1/4 cup oil |
egg substitute (to equal 1 egg) |
Directions:
1. Preheat oven to 350 degrees F. 2. In a large bowl, stir together the flour, baking powder, and salt. 3. Add the sweetener, milk, vanilla, oil, and egg replacer and mix together gently until just mixed. 4. Pour into a lightly oiled cake pan and bake for 25-30 minutes. 5. Check with a knife to see if done. 6. When cooled, ice and serve. |
