I had this on lobster and it was amazing. I'm sure it would be good on other things as well. The chef verbally told me ingredients so they may not be exact or quite right. Ingredients:
1 -2 shallot, minced |
1 vanilla bean, split |
1/4 cup butter |
1 cup white wine, very light such as pinot grigio |
1/2 cup heavy cream |
salt and pepper |
1 pinch sugar |
Directions:
1. Saute shallots, add wine, and peeled vanilla bean. Boil down slowly (about 2 hours); stir occasionally. Add cream simmer down. Add salt, pepper and sugar. Serve warm over cooked lobster. |
