Vanilla-Apple Yogurt Cups

The acid in the yogurt keeps the apples from turning brown in this recipe. This came from Vegetarian Times. I have not tried this, just posting for safe keeping.
Ingredients:
16 ounces plain low-fat yogurt or 16 ounces soy yogurt
3 tart apples, grated
2 -3 tablespoons honey or 2 -3 tablespoons agave nectar
2 tablespoons lemon juice
1 teaspoon vanilla extract
1/2 cup chopped dried apricot
1/2 cup chopped pecans
1/2 cup raisins
Directions:
1. Combine first 5 ingredients in bowl.
2. Spoon into glasses, and sprinkle with apricots, pecans, and raisins.
