Vanilla And Cardamom Glazed Beets

Delicious roasted beets with a vanilla and cardamom glaze....
Ingredients:
6 med-large red and golden beets (2lbs)
1/3 c orange juice and 1/2 tsp zest,finely grated
1-1/2 tb sherry vinegar
2 tsp lt. brown sugar
2 tsp unsalted butter
1/4 tsp ground cardamom
1/4 tsp vanilla
Directions:
1. Set rack in muiddle position and heat oven to 400'
2. Wash beets,wrap tightly in foil,place in roasting pan and cook till tender,about 1-1/2 hours.
3. Un wrap beets and when cool,peel,cut into wedges and set aside.
4. Meanwhile,in large skillet,combine orange juice,zest, vinegar and sugar. Over med heat,simmer, swirling occasionally,until reduced and syrupy,about 4 mins.
5. Adjust heat to low,add butter,and swirl to blend. Add cardamom and vanilla,and swirl to combine.
6. Add beets and salt and pepper to taste,and cook stirring constantly,until heated through,about 2 mins. Serve at once..
