Tasty squash side dish
Ingredients:
3 1/2 cups butternut squash
5 tablespoons balsamic vinegar
1 cooking spray
1 tbsp parsley
1 clove garlic minced
1 cup water
Directions:
1. coat frying pan with cooking spray
2. add squash and heat for a 1-2 minutes on high heat to brown the edges
3. add all other ingredients, stir
4. cook covered (checking often) on medium heat until squash is tender
5. you can add more water if all the water boils down before the squash is tender
6. serve warm or chilled
