These are nothing but mini cookies with almond flavoring and a pecan crunch, followed by a final blast of cherry filling. Great for Valentine's Day. Ingredients:
1/2 cup butter or margarine, softened |
1 (3-ounce) package cream cheese, softened |
1 tablespoon granulated sugar |
1 1/3 cups all-purpose flour |
1/2 cup finely chopped pecans |
1 (21-ounce) can cherry filling and topping |
1 teaspoon almond extract |
Directions:
1. Put butter, cream cheese and sugar in a large mixing bowl. 2. Beat with an electric mixer on medium speed until smooth. 3. Add flour and pecans; mix well. 4. Roll dough into 1-inch balls. 5. Press balls evenly into the bottom and up the sides of 1-3/4- x 1-inch miniature muffin cups. 6. Combine cherry filling and almond extract. 7. Spoon about 1 tablespoon cherry mixture into each pastry-lined cup. 8. Bake in a preheated 350-degree oven 20 to 25 minutes, or until lightly browned. 9. Cool in pans 5 minutes. Transfer to wire racks to cool completely. |
