A sweet treat for your Sweetheart or a great project with the kids. These heart shaped chocolate mint cookies are dipped in a chocolate mint coating on one side. They are a lovely treat to offer anyone. Nestles used to offer semi-sweet mint chips, this recipe is from Nestles 1987. Read more . The chips are swirled now I think, but the taste is the same, sort of like a Thin Mint girl Scout cookie but not so sweet. Ingredients:

1 10 ounce package (11/2 cups) mint chcolate morsels, divided |
1 cup of flour |
3/4 tsp baking powder |
1/4 tsp baking soda |
1/4 tsp salt |
1/4 cup butter, softened |
6 tbl sugar |
1/2 tsp vanilla |
1 egg |
glaze |
1 c mint chocolate morsels, reserved |
1/4 cup vegetable shortening |
3 tbl corn syrup |
2 1/4 tsp water |
Directions:
1. Cookies 2. Melt 1/2 Cup of chips over hot, not boiling water, stir until smooth (or microwave), set aside 3. In a small bowl combine dry ingredients; set aside 4. In a large bowl combine butter, sugar and vanilla and beat until creamy 5. Beat in egg and melted morsels 6. Gradually beat in flour mixture 7. Shape dough into ball and wrap in wax paper, chill for about 30 minutes 8. Preheat oven to 350F 9. On lightly floured board, roll out dough to about 3/16 thickness, if dough is too dry wet hands with water and work dough until rolling consistency. 10. Cut with a 2 heart shaped cookie cutter 11. Reroll remaining dough and cut out. 12. Place on ungreased cookie sheet 13. Bake for 8-10 minutes and cool completely on wire racks 14. Glaze 15. Combine over hot(not boiling) water the remaining 1 cup of morsels, shortening, corn syrup and water; stir until morsels are melted and mixture is smooth 16. Remove from heat but keep over hot water 17. Dip 1/2 of each cookie into glaze and place on waxed paper lined cookies sheets 18. Chill 10 minutes until set, store with wax paper between layers 19. Makes about 3 1/2 dozen 2 cookies |
