VACHERIN This recipe came from an estate sale. I obtained it when I purchased the family collection from the Zimmerman Estate in Terrell, Texas in 1989. Ingredients:
3 egg whites at room temperature |
1 cup granulated sugar |
1 pinch salt or a pinch of cream of tartar |
2 cups fresh berries |
2 cups sweetened whipped cream |
3 mint sprigs |
Directions:
1. Preheat oven to 300. 2. Add egg whites and salt to a mixing bowl then beat on medium until soft peaks form. 3. Add sugar and continue to beat until very stiff peaks form. 4. Fill pastry bag with meringue handling it gently. 5. Pipe out eight 3” diameter rings on the lined sheet tray. 6. You want to pipe it so the middle is free to be filled later. 7. Place in oven and cook 35 minutes then turn off oven and allow sitting for 1 hour. 8. Serve with berries, cream and mint. |
