Getting ready for summer! A little salsa or green chilis will give this a little punch! Ingredients:
32 ounces v8 vegetable juice |
1 1/2 cups chopped cucumbers |
1 cup sliced celery |
1/4 cup chopped green pepper |
1/4 cup sliced scallion |
1 medium tomato, seeded and chopped |
1 tablespoon minced garlic |
1 teaspoon lemon juice |
1 teaspoon salt |
1/4 teaspoon pepper |
Directions:
1. Pour V-8 into large bowl. 2. Add all remaining ingredients and mix well. 3. Cover and chill for 2 hours. |
