Uwajimaya Long Grain Fried Rice |

This is from my favorite chinese grocery store. Ingredients:
3 tablespoons oil |
2 eggs, beaten |
3 slices bacon, cut in 1-inch pieces |
1/2 cup pork or 1/2 cup chicken or 1/2 cup shrimp (cooked and diced) or 1/2 cup ham (cooked and diced) |
1 cup bean sprouts |
3 cups long grain rice, cooked and cooled |
2 -3 tablespoons soy sauce |
1 small onion, diced |
1 green onion, chopped |
Directions:
1. Heat 1 Tblsp. oil in the wok and scramble eggs. Remove and set aside. Fry bacon until most of fat is cooked out. Drain excess fat and replace with 2 Tblsp. oil. Add cooked meat, onions and beansprouts. Stir fry for 1 minute. Add rice and soy sauce. Fry until rice is hot, turning temperature down if necessary. Add eggs and mix in with rice. Toss in green onions. |
