This dish is good when I'm feeling lazy and the ingredients are simple and usually on hand. I keep frozen chopped peppers and onions in the freezer for recipes like this. This recipe tastes like stuffed peppers. Ingredients:
crust |
no more than 1 pound ground chuck |
1/2 cup seasoned bread crumbs |
1/2 cup diced peppers |
1/2 cup diced onions |
1/2 cup tomato sauce |
salt & pepper |
filling |
1+1/3 cups minute rice |
1+1/2 cups tomato sauce |
1 cup water |
1 cup sharp cheddar cheese, shredded (plus more for top) |
salt & pepper |
Directions:
1. Mix together crust inredients like you would a meatloaf. 2. Press into a deep-dish pie plate ( I use my cast iron frying pan). 3. shape into a pie crust leaving a well in the center 4. Mix together all filling ingredients. Pour into well. It will be wet and loose, but it will become firm and dense 5. Cover with foil and bake at 350 for 30 minutes; remove foil; top with reserved cheese and bake another 15 minutes |
