I make this on Thanksgiving but I had left over pumpkins in the deep freeze so I made it a few weeks ago.It is always delicious no matter what day of the year.This is very high in Carbs so I can't have it, Oh well. Read more .... Ingredients:
1 cup granola, low fat |
16 ounces pumpkin, can use can pumpkin |
14 ounces sweetened condensed milk, fat free |
2 large eggs |
1 tsp. cinnamon, ground |
1/2 tsp. ginger, ground |
1/2 tsp.nutmeg, ground |
1/2 tsp salt |
Directions:
1. Preheat oven to 425F. 2. In a large bowl,combine all ingredients except granola topping. 3. Mix well. 4. Pour into square baking pan. Bake 15 minutes. 5. Reduce oven temperature to 350 F, and bake 30 minutes longer. 6. Sprinkle granola over top of pumpkin. Bake for 5 to 10 minutes or until knife inserted 1-inch from edge, comes out clean. 7. Let cool and serve with fat free Cool Whip. |
