Upside-Down Cheesy Chicken Cornbread |

I tried this during my visit to the food alley at the The National Cornbread Festival in Pittsburg Tennessee. Ingredients:
1 1/2 cups cooked boneless skinless chicken breasts, chopped |
1 (14 1/2 ounce) can cream of chicken soup |
1 cup chicken broth |
1/4 cup vegetable oil |
1/4 cup diced onion (optional) |
1 cup cheddar cheese, shredded |
2 cups self-rising cornmeal |
2 eggs |
Directions:
1. Spray pan with non-stick spray. Arrange chicken in 8-inch glass baking dish. Sprinkle with cheddar cheese. Mix all other ingredients together and pour over top of chicken. Bake in preheated moderate oven (350 degrees) about 30 minutes. Cut in square or spoon out to serve. Makes 4 to 6 servings. |
