Easy to make dip, best when heated in microwave with ingredients you probably have on hand.
Ingredients:
1 (8 ounce) package frozen chopped spinach
1 (8 ounce) package cream cheese, softened
1/2 cup sour cream
1 (12 ounce) jar marinated artichokes
1 (7 ounce) jar roasted peppers, drained
1/2 cup grated parmesan cheese (i used more for thicker consistency)
salt and pepper
cayenne pepper (optional)
Directions:
1. Thaw spinach as directed on package, squeeze out any excess liquid. Set aside.
2. In a food processor, combine cream cheese, sour cream and undrained artichoke hearts. Pulse until blended. Add drained peppers and Parmesan cheese, pulse until fairly smooth. Season with salt and pepper. Add cayenne pepper if using. Add spinach and pulse until blended.
3. Transfer mixture to a microwave safe bowl, suitable for serving. Sprinkle top with Parmesan cheese if desired. Microwave on high for 7 minutes until heated through and bubbly. Stir, serve with crackers.
