Unusual Chicken Parmesan

Chicken Parmesan with homemade marinara using a couple unsuspected ingredients which makes it very tasty. It seems like a lot of work but truly it is not. There are just a lot of steps that are very easy and quick. I had to adjust my ingredients to what I had on hand thinking I had breadcrumbs. But I must have run out. I substituted crushed bagel chips and the outcome was so tasty I just had to share it
Ingredients:
1 boneless skinless chicken breast
28 ounces crushed tomatoes
1/2 teaspoon basil
1/4 sweet onion
1/4 teaspoon oregano
1/4 teaspoon sugar
2 tablespoons bottled garlic
1 pinch sea salt
fresh ground black pepper
1/4 cup extra virgin olive oil
2 tablespoons extra virgin olive oil
1 large egg
1/4 cup milk
15 bagel chips (sea salt flavored)
15 bagel chips (roasted garlic flavored)
fresh ground black pepper
1/4 cup parmesan cheese (shredded)
2 tablespoons parmesan cheese (shredded)
3/4 cup whole milk mozzarella
8 ounces angel hair pasta
Directions:
1. extra finely dice onion.
2. using a large sauce pan saute the diced onion and the minced garlic in 2 TBLS extra virgin olive oil until onions are very soft.
3. add 28 oz can crushed tomatoes (I use organic).
4. add the basil, oregano, sugar, salt and a 4 grinds of fresh ground black pepper.
5. place lid slightly askew to let out steam and heat on medium low while preparing the rest of the meal stirring occasionally.
6. using a plastic bag such as Ziploc place the garlic bagel chips and the sea salt bagel chips in bag and crush the chips very fine. I use a meat mallet.
7. crack open the egg and place in shallow dish.
8. add milk.
9. whisk until yolk, egg and milk are well mixed.
10. put the crushed bagel chips in another shallow dish. I like using a pie pan.
11. add 1/4 cup shredded Parmesan cheese to crushed bagel chips.
12. add 4 grinds of fresh ground pepper to bagel chips and mix well with hands.
13. taking the chicken breast slice all the way around the breast and splitin two so you end up with two thin chicken breasts which are the same width and length of a regular whole chicken breast but now thinner. Instead of pounding it out.
14. dredge each chicken breast slice through egg/milk mixture.
15. dredge each chicken breast slice through bagel chips.
16. dredge each chicken breast back through egg/milk mixture.
17. then back through the bagel chips making sure the chicken slices are well coated.
18. pat the bagel chips into the chicken breast slices.
19. place coated chicken breast on a wire rack over a piece of wax paper (this helps the coating stay on once you start cooking) and let set 5 minutes.
20. preheat oven to 350.
21. use a large deep frying pan and place the remaining 1/4 cup extra virgin olive oil and heat until little bubbles appear.
22. gently place each chicken breast slice in oil and brown on each side until dark golden brown about 6-7 minutes each side being sure not to burn.
23. take chicken out of frying pan and place in baking dish.
24. pour 1/4 cup marinara sauce over each chicken breast slice making sure the breast is covered enough that a little rests in the bottom of the dish.
25. sprinkle 1 TBLS spoon shredded Parmesan cheese on each breast slice.
26. divide the mozzarella cheese between each breast slice.
27. place chicken in oven uncovered and heat 30 minutes or until cheese is melted and has light brown places.
28. just before chicken is done cook half a box of angel hair pasta using product specifications.
29. place half angel hair pasta on plate.
30. place the chicken breast slice next to angel hair pasta.
31. pour remaining sauce over angel hair pasta and serve.
