Unruly Shrimp Under the Influence of Asia |

Never boring and somewhat unruly, these shrimp are fun to share. So slap an apron on the cabana boy and have him come join you in the kitchen. Ingredients:
1/2 lb large shrimp, peeled and deveined |
1/4 teaspoon salt |
1/4 teaspoon sugar |
1 teaspoon ginger, finely grated |
1 teaspoon mirin (optional) |
1 egg |
2 tablespoons cornstarch |
2 tablespoons flour |
1/4 cup panko breadcrumbs |
1 tablespoon sesame seeds |
2 tablespoons rice vinegar |
2 tablespoons sugar |
1 tablespoon water |
2 1/2 tablespoons catsup |
1/2 teaspoon soy sauce |
1/2 teaspoon ginger, finely grated |
1 teaspoon cornstarch |
oil (for frying) |
Directions:
1. In a small bowl, rub the rub/marinade ingredients on the shrimp and let sit for 15 minutes. 2. Beat an egg and add to the shrimp. 3. In a small bowl, mix the cornstarch, flour, Panko, and sesame seeds. 4. Dip the shrimp into the coating mixture and let sit for 5 to 10 minutes to set. 5. Fry shrimp several at a time over medium-high heat until golden brown. Be careful as this takes only a minute or two. Drain on paper towels. 6. Dipping Sauce: Mix ingredients in a small saucepan over medium heat stirring constantly until sauce smooths and thickens. |
