Serve these zucchini cakes for a side dish or make small ones and serve from the buffet table. Very good, having a slight seafood flavor! Ingredients:
2 cups coarsely ground zucchini |
2 cups coarsely ground onion |
6 round buttery crackers, crushed |
4 eggs lightly beaten |
old bay seasoning |
butter (no subsitute) |
Directions:
1. Drain zucchini and onion well 2. In large bowl, combine zucchini, onion, crumbs and eggs 3. Add some Old Bay Seasoning 4. Mix well 5. Drop by tablespoonfuls onto a hot buttered griddle 6. Cook until brown on underside, turn and brown on other side |
