Ingredients:
2 (10 oz.) packages frozen baby lima beans |
1/4 cup vegetable oil |
3 ribs celery, chopped |
2 small red onions, chopped |
3 large, ripe tomatoes, cored, seeded and chopped |
1 cup fresh or frozen corn kernels |
1/4 cup cider vinegar |
salt and pepper |
1/2 cup chopped basil |
Directions:
1. Cook lima beans in 1 cup boiling water for 10 minutes; rinse and drain. 2. In skillet, heat oil over medium heat. Add celery and onions; cook for 4 minutes. Add lima beans, tomatoes, corn and vinegar; season with salt and pepper. Cook for 2 minutes. Toss with basil. |
