Uncle Jon's Mashed Potatoes |

My friend Jon's awesome mashed potatoes. Excellent with a grilled steak and asparagus. Ingredients:
1 yellow onion, diced |
2 small shallots, minced |
4 garlic cloves, minced |
4 tablespoons butter, divided |
3 lbs potatoes (red or creamer are best) |
milk |
salt and pepper |
2 teaspoons horseradish |
Directions:
1. Sauté the onion, shallots and garlic in 1 Tablespoon butter until starting to caramelize. 2. In the meantime boil potatoes until soft. 3. Drain and mash the potatoes with a mixer or potato masher. 4. Add the remaining 3 Tablespoons butter until melted. 5. Add the onion mixture,. 6. Start adding milk until the potatoes are the right consistency. 7. Taste for salt and pepper; add the horseradish. 8. Taste and add more butter, salt and pepper, or horseradish as needed. |
