Uncle Jimmy's Pickled Eggs |

This recipe was my uncles. We always loved it when he made these Ingredients:
24 -36 hard-boiled eggs, peeled |
7 tablespoons whole mixed pickling spices |
6 cups white vinegar |
2 cups water |
2 teaspoons salt |
2 (16 ounce) cans canned beets, with juice |
1 cup sugar |
Directions:
1. In a sauce pan mix together pickleing spice, vinegar, water and salt. 2. Bring to a slow boil and simmer for 10 minutes. 3. Add 2 cans of beets and 1 cup of sugar to the mixture 4. Pour all over the eggs. 5. let eggs sit in an airtight container for 3 days and enjoy. |
