Uncle Bens Famous Stuffed Spinach |

Don't know who Uncle Ben is but certainly like his delicious spinach. Ingredients:
1(10oz.) pkg.frozen chopped spinac,thawed and squeezed dry |
3/4c bread crumbs |
1/2c butter,melted |
1/4c grated parmesan cheese |
3 lg.eggs,lightly beaten |
11/2 tsp. ground black pepper |
garnish:sliced tomatoes,ground black pepper |
Directions:
1. Preheat oven to 350. Lightly grease an 8x8 baking dish.
2. In a large bowl,combine spinach,bread crumbs,butter,cheese,eggs and pepper. Spoon mixture into prepared dish;bake for 15-18 mins. or till firm.
3. Garnish with sliced tomatoes and ground black pepper if desired. Serve immediately.
